Baked Winter Squash
½ cup finely chopped onion
1 tablespoon margarine
3 cups winter squash, cooked and mashed (or 2 packages - 12 ounces each frozen squash, thawed.
½ cup grated cheese (part-skim mozzarella)
¼ teaspoon pepper
Preheat oven to 400°F.
Sauté onions in margarine until tender.
Combine all ingredients. Place in a 1-quart casserole.
Bake uncovered 35 to 45 minutes.
