Baked Winter Squash

Ingredients:

  • ½ cup finely chopped onion
  • 1 tablespoon margarine
  • 3 cups winter squash, cooked and mashed (or 2 packages - 12 ounces each frozen squash, thawed.
  • ½ cup grated cheese (part-skim mozzarella)
  • ¼ teaspoon pepper

Directions:

  1. Preheat oven to 400°F.
  2. Sauté onions in margarine until tender.
  3. Combine all ingredients. Place in a 1-quart casserole.
  4. Bake uncovered 35 to 45 minutes.
