Guacamole

2 creamy ripe avocadoes, mashed
1 homegrown tomato, diced
2 tsp Vidalia onion, onion
1 garlic clove, squeezed
2 tsp lemon juice

Mix all ingredients and add salt and pepper to taste.
Serve with sour cream or Greek yogurt.
You could substitute a ripe peach for the tomato.
