7-8 large white potatoes, boiled and stiffly mashed (make sure they are not too soft)
1 C sour cream
1 C small curd cottage cheese
2 T butter, cut into small pieces
Preheat oven to 350º.
Mix potatoes, sour cream, and cottage cheese and place in greased 9x13 baking dish. Sprinkle with Parmesan cheese and dot top with butter. Bake for 30-45 minutes.
Notes: Instant mashed potatoes can be substituted if they are prepared with less milk/water than instructed on package. Up to 2 C of sour cream and/or cottage cheese may be used.
