1 c milk
¾ c flour (can use whole wheat, if desired)
1 c grated cheese
Salt & pepper to taste
Preheat oven to 400oF. Butter a 9-in pie plate. Blend milk, flour, egg, salt, and pepper using an electric mixer. Stir in half of cheese. Pour into pie plate and bake until puffed and golden, about 25 minutes. Sprinkle remaining cheese on top. Continue baking until cheese has melted, about 3-4 minutes. Cut into wedges and serve immediately.
