Broccoli, Noodle & Cheese Bake

¼ Cup Smart Balance
2 green onions, sliced
¼ Cup all purpose flour
2 ¼ Cup milk
¼ Cup chopped parsley
1 ½ tsp salt
¼ tsp pepper
¼ tsp thyme
Dash garlic
Dash nutmeg
1 Cup low-fat cottage cheese
4 Cup cooked noodles (8 oz dry)
1 pkg (16 oz) frozen chopped broccoli, cooked
8 oz grated cheddar cheese
2 (6 ½ oz) cans tuna, drained

Preheat oven to 350 F.
Sauté onions in margarine until soft. Add flour, stirring constantly for few minutes. Slowly add the milk, continuing to stir. Add the cottage cheese and seasonings. Cook till sauce thickens. Stir in cheddar cheese till melt. Combine noodles, broccoli, tuna and sauce. Pour mixture into greased 9 x 13” baking dish. Bake until piping hot and bubbly (about 20 minutes)
Serves 6-8.
