"Turkey for the Holidays Today's site from the University of Illinois Extension offers a compendium of information about dealing with that holiday favorite -- the turkey. Gentle Members rolling up their sleeves in gleeful anticipation at the prospect of cooking or eating vast quantities of this staple of the festive board, will find a comprehensive range of not only useful but fascinating material at the site. "Does turkey make you sleepy? Those who exercise dietary prudence will not experience extreme fatigue at meals-end. As for the rest of you, take a nap and please stop blaming the turkey." - from the website This excellent site thoroughly explores such essential topics as safe storage and cooking techniques and explains why some preparation methods like the "Slow Cooking Overnight Method" can be downright dangerous. Additional sections cover carving, leftovers, side dishes and turkey nutrition while the Turkey FAQ discusses even more questions primarily related to cooking and eating. Perhaps the most interesting sections for sheer eye-opening trivia are the "History and Lore" and "Turkey Facts" categories. Also included are suggestions for family activities and crafts and relevant links about the American Thanksgiving holiday. "These tips for storing leftovers were given on the University of Illinois website : * Plan ahead, clean out the refrigerator and make room for leftovers several days before the holiday feast. * Leftovers should be stored in the refrigerator within 2 hours after cooking is completed. Why just 2 hours? Because bacteria that cause food poisoning can multiply to undesirable levels on perishable foods left at room temperature for longer than that. * Large quantities should be divided into smaller portions and stored in several shallow containers. Food in small amounts will chill faster keeping it safer and fresher."
