Caitlin Huth.

Caitlin Huth came to University of Illinois Extension in 2012 serving DeWitt, Macon, and Piatt counties as a Nutrition and Wellness Educator. Her primary responsibility is to help community members gain the knowledge, skills, and tools to live healthier, more nutritious lifestyles. This includes delivery of evidenced-based nutrition education programming. Her special areas of interest include obesity and disease prevention, food purchasing, and safe, healthful cooking and food preparation.

Huth has a Bachelor of Science degree in Family and Consumer Sciences (Food, Nutrition, and Dietetics) from Illinois State University. She completed her Master of Science degree in Family and Consumer Sciences (Dietetics) through Eastern Illinois University and dietetic internship through Sarah Bush Lincoln Health Center. Huth is a member of the Academy of Nutrition and Dietetics (formerly the American Dietetic Association) and a Registered Dietitian.

Program Offerings

Meals for a Healthy Heart
  • 2-part class focusing on heart health, including discussion of risk factors for coronary heart disease, heart healthy foods, menu planning, physical activity and fitness, and weight management.
  • Food demonstrations, tastings, and related recipes are provided.
I on Diabetes
  • 4-part class focusing on prevention and management of diabetes, including discussion of treatment goals, self-monitoring, food choices and meal planning, managing carbohydrates, fat, and portions of other nutrients, and reading food labels.
  • Food demonstrations, tastings, and related recipes are provided.
Illinois Department of Public Health: 15 Hour Food Service Sanitation Manager Certification Course
  • 15-hour training to meet requirements for the State of Illinois for the Food Service Managers Certification.
  • As required by the IDPH Food Sanitation Code, food establishments must be under supervision of a certified food service sanitation manager. This program addresses topics including foodborne pathogens, employee and personal hygiene, safe food handling, preparation, service, and storage, pest management, and Hazards Analysis Critical Control Point (HACCP).
Illinois Department of Public Health: 5 Hour Refresher Course
  • 5-hour training to meet requirements for re-certification of the Food Service Managers Certification.
  • Program includes topics of safe food handling, preparation, service, and storage, employee and personal hygiene, and additional safety and sanitation topics.
Serve It Safely
  • One-time training for volunteer and civic groups that sell food to the public.
  • The program ensures participants have the skills and materials to prepare, transport, store, and serve safe and wholesome food while reducing the risk for foodborne illnesses through proper food safety and sanitation.
